Let me start by saying I am probably the world’s biggest Ina Garten fan. I spend most of my free time watching episodes of her Food Network show or trying out some of her fantastic recipes. And I also happen to have spent two summers running around East Hampton, New York, hoping to bump into her in Scoop Du Jour or Citarella, so it should come as no surprise that my favorite summer recipe comes from Ina.
I find that the perfect summer dish is Barefoot’s Roasted Shrimp and Orzo. It is packed with fresh herbs, cucumber, feta, and perfectly cooked shrimp that combine to make an amazing salty and refreshing combination. The dish is refrigerated so its a great treat for those hot summer afternoons and nights, especially with a nice glass of prosecco.
