An absolute must for your pantry is cannellini beans. They are a great add-in for salads, soups, pastas, and even a simple side dish. Being a huge fan of them and doing my best to maintain a healthy diet, I have been using them in a lot of my meals lately.
Today, I decided to keep it simple and just enjoy the beans, cooked with a few other items. Below is the recipe I came up with.
1 can of cannellini beans (drained)
1/2 medium sized yellow onion, diced
1/8 tsp of garlic powder
1/2 tsp dried rosemary
Salt and pepper
1 cup of water
Basil and parmesan cheese for topping
Heat a medium sized sauce pan over medium-high heat. Once the pan is hot add about a tablespoon of olive oil and the diced onion. Cook onion until translucent. Pour in the beans and mix around in the pan for a minute. Turn heat down to low and add in salt, pepper, dried rosemary, and garlic powder. Stir to combine. Add cup of water and let simmer for approximately 15 minutes. The dish will be ready when the water is mostly absorbed and a the mixture becomes somewhat thick. Top with your favorite topping and enjoy! I chose to top with chopped basil leaves, grated parmesan cheese, and a drop of truffle oil.
