Looking for a fun and easy snack that takes only minutes to prepare? Well, look no further! As someone who loathes standing in front of a hot stove for hours, I have come up with a great and light summer snack that is packed full of flavor.
Back when I spent my summers working in East Hampton, I would always want a snack between breakfast and lunch. On days off, I wanted to spend as little time as possible cooking so I could really enjoy a nice day at the pool or beach. So I came up with this tasty snack based on what was a staple in me and my roommates fridge.
Whenever her parents would come we would always end up with an insane amount of bread or bagels, so we would spend the next few days consuming what we could and freezing the rest. While egg sandwiches are delightful and bagels are scrumptious, I wanted to switch things up. So I combined a slice of good french bread, or a bagel, with slices of fresh tomato and a sprinkle of chevre or feta cheese.
Simply toast the bread or bagel, or you can omit the carbs if you would like. Slice the fresh and ripe tomatoes into 1/2 inch or 1/4 inch slices, and be sure to sprinkle with salt. Tomatoes need salt! Sprinkle chevre or goat cheese onto your bread, or bagel, and place the tomatoes on top. Just drizzle a little olive oil on and sprinkle with fresh herbs, like basil, and there you have it!
Enjoy it on a hot day next to the pool, or just as a simple snack year round!
